- Mientras se cocina el arroz, se prepara el caramelo en un cazo se pone el azúcar y cuatro cucharadas soperas de agua a fuego vivo y revolviendo con una varilla, cuando coge color tostado se añaden las otras cuatro cucharadas de agua caliente, con cuidado porque sale mucho vapor, y se deja a fuego lento durante tres o cuatro minutos.
- Se vierte el caramelo en una fuente de horno, sobre el caramelo el arroz (sin la corteza de limón)y sobre el arroz se extienden las claras previamente montadas a punto de nieve
- Al horno unos cinco minutos hasta que las claras se doren. Se puede servir templado o frío
