- Se lavan y se desvenan los chiles guajillo, luego se ponen a remojar en agua hirviendo, luego se escurren y se muelen en la licuadora con poca agua de cocción, un ajo pelado y un pedazo de la cebolla.
- En la olla exprés se agregan los granos de maíz (previamente escurridos) la cebolla restante, los ajos restantes, la carne, la pimienta y la sal.
- También se agregan los chiles molidos colados y suficiente agua para 2 hrs. de cocción.
- Se pone al fuego medio-alto durante unas 2 hrs u hora y media después de que la olla empiece a silbar, una vez pasado el tiempo se apaga, se deja enfriar la olla y se abre, se sacan los ajos, cebolla y pimientas y se termina de sazonar de sal.
- Para servir primero se sirven granos de maíz y carne al gusto y luego caldo.
- Luego se van agregando elementos de su elección para terminar de sazonar al gusto, se sugiere agregar primero sal, limón, orégano y cebolla picada e incluso la salsa o picante, mover y probar al gusto de cada comensal.
- Luego ya que está bien de sabor se le agregan las verduras al gusto de cada quien y a disfrutar este riquísimo pozole, buen provecho!
