- Para la salsa tatemamos los chiles pasilla, después los pasamos a un plato para desvenar los chiles.
- En un molcajete ponemos los ajos restantes, una cucharadita de sal y los chiles previamente desvenados, se muelen todo los ingredientes hasta tener un pasta de chile.
Ya teniendo la pasta agregamos caldo de chepil y mezclamos hasta tener la consistencia que deseada. - Para las tripas, preparamos en un brasero un poco de carbón, cortamos tiras largas y ponemos directamente en las brasas cuidado de que no se queme.
Si la tripa es fresca, hervir en un sartén con agua y después puedes pasar a asar las tripas. - Servimos y listo para comer.
