Aparte la carne de puerco (o pollo) se guisa con achiote como cochinita pibil. (Se puede hacer guisado con jitomate sin achiote) con cebolla y epazote a fuego bajo. Se cuece 1/2 kg de lomo de cerdo y se deshebra o bien se hace con 2 pechugas de pollo que se cuecen y se deshebran.
Se compra el achiote y se muele la mitad de la tableta en la licuadora con un chorrito de vinagre o con naranja agria, un diente de ajo, una pizca de orégano y agua. - En una olla se pone a freír una cebolla cortada en medias lunas y cuando empiece a ponerse transparente se le agrega el achiote molido colándolo; se sazona con 3 cucharaditas de consomé en polvo y cuando suelte el hervor se le agrega la carne o el pollo deshebrado.
Por separado se pica cebolla en rueditas delgaditas, dos jitomates y hojitas de epazote.
