  5. Revisar sal y condimentos, si es necesario agregar más caldo. Si se quiere menos ácido agregar naranjas dulces. Poner en la estufa y dejar hervir al menos por 1 hora en olla express. La carne debe estar suave y con un color rojizo o naranja.
  6. Para hacer tacos, tortas o pambazos de cochinita.

    Agregar cebolla morada fileteada con limón, vinagre y chiles habaneros.

    Nota: La carne queda mejor y con más sabor si se deja marinando desde el día anterior.
